Staying at home is hard. We miss our favorite restaurants. We miss traveling to exotic places. We miss laughing with friends.
One of the best ways we can care for ourselves is to laugh and eat well.
In the next installment of our series, “Mindful Adventuring,” we bring you Adventures in Cooking: 6 pantry-friendly pairings guaranteed to bring joy and good taste to your home.
We paired light-hearted shows with plant-based recipes as a way to spice up quarantine. Each recipe is designed to be flexible and easy to whip up with what you have lying around at home. We’ve organized them in order from short to long, so you can pick based on how long an adventure you’re looking for. Plus, these meals are great for you and great for the earth: each plant-based meal has a carbon footprint 3-5x lower than a meat-centered alternative.
From our kitchen to yours, cheers to health and laughter!
Gordon Ramsay & Fancy Scrambled Eggs (10-15 mins to make and watch)
One of the benefits of WFH is having time to make yourself a real breakfast. If you’re looking for a no-fuss, 10-min breakfast that feels luxurious, Gordon Ramsay’s fluffy scrambled eggs are a perfect way to start your day. Once you go “on the heat, off the heat” you’ll never go back.
Jerry Seinfeld & Whipped Coffee (15-20 mins to make and watch)
Jerry Seinfeld likes coffee, is obsessed with vintage cars, and only enjoys talking to comedians. The result is an irreverent, lighthearted short-form show that can be enjoyed in the time it takes to make and drink the whipped coffee TikTok is raving about. A perfect way to stave off the rona.
Alison Roman & Matzah Ball Soup (30 mins to make and watch) Alison Roman brings warmth to a socially isolating season. While Passover is over, we’re still craving heart warming matzo Ball soup. You can always make matzo ball soup from a box, but in case you want to make it from scratch, we’ve found a simple recipe.
Samin Nosrat & Pesto Pasta (45 mins to make and watch)
Samin Nosrat has taken America’s kitchens by storm with her facial expressions and infectious laugh. In the first episode of her Netflix special, Salt Fat Acid Heat, she explores the flavors of Italy through the lens of mastering cooking with fat. One of most delicious dishes she encounters is the simplest: a classic pesto pasta.
In his show, Ugly Delicious, Momofuku celebrity chef David Chang explores iconic dishes and the interactions between different cultures. He travels around LA and Mexico to explore twists on the classic taco. We offer our own take on a taco with what we had left in our fridge. Hope you enjoy it as much as we did!
Heat olive oil on a saute pan at medium heat. Add cumin, garlic, and jalapeno. Add onions, sliced long, and cook until lightly browned.
Add poblano peppers, sliced long. Cook for a few minutes until softened.
Chop the Beyond Sausage into small chunks and add to the pan. Cook as instructed on the package for several minutes.
If you have it, add feta to the hot pan and mix after turning off the heat but before taking it off the stove, so it melts slightly.
Garnish with cilantro, guacamole, and pico as available.
